Take chicken parmesan to the next level! My husband told me that this rosemary focaccia bread recipe is the best bread I have made. With that being said, I have decided to incorporate it into many of my new recipes. This chicken parmesan is so yummy, especially when sandwiched between such amazing bread!

INGREDIENTS
Chicken Ingredients
- 5 chicken breasts cut in half
- 2 eggs whisked
- 1.5 cup flour
- 1 teaspoon salt
- 1 teaspoon pepper
Homemade Marinara Sauce
- 3 tablespoons oil (I use avocado oil)
- 1/2 onion (diced)
- 3 cloves garlic (freshly minced)
- 1 teaspoon oregano
- 1.5 teaspoons salt
- 1 teaspoon basil
- 1 teaspoon garlic salt
- 1 tablespoon sugar
- 28 oz crushed tomatoes
- 1/2 cup chicken broth
Focaccia Dough
- 1.5 teaspoon yeast
- 1.5 cups warm water
- 1/2 tablespoon sugar
- 3.5 cups of flour
- 1.5 teaspoons salt
- 1 tablespoon avocado oil
INSTRUCTIONS
Focaccia Bread Instructions
3 hours before you plan to eat (or earlier) prepare the focaccia dough.
- In a medium sized bowl, combine yeast, warm water, and sugar. Mix thoroughly, and allow it to sit until for 5 minutes until it has bubbled / appears foamy.
- Add flour, salt, and avocado oil (olive oil works too).
- Using a danish whisk, mix the dough until all the ingredients are well combined. Do NOT kneed the dough until smooth.
- Allow dough to rise in a warm location for an hour.
- Add additional oil to your finger tips, remove the dough, and press until it flattens to the size of a baking sheet.
- Allow dough to rise an additional hour.
- When dough has roughly 5 minutes left to rise, combine the ingredients for the smear.
Chicken Parmesan Instructions
- Preheat the oven to 350 degrees F.
- Slice each chicken breast in half. Place parchment paper over each slice and flatten the breast. Set the chicken breast aside.
- On a plate, combine flour, salt, and pepper.
- In a small dish or bowl, whisk two eggs.
- Dip each chicken breast slice in the egg mixture, then directly onto the flour plate. Make sure each side of the chicken breast is fully coated.
- Place chicken breasts on a wire rack while preparing sauce.
- Add oil, onion, garlic, and seasonings to a sauce pan. Cook over medium heat until onions become translucent (roughly 5 minutes).
- Add crushed tomatoes and chicken broth to the seasoned onions. Allow the sauce to simmer for 10 minutes.
- While sauce is simmering, heat canola oil in a cast iron skillet until it reaches 340 degrees F.
- Fry each chicken breast for 6 minutes (3 on each side). Place chicken in an oven safe dish.
- Top each fried chicken breast with homemade marinara sauce, and sprinkle with parmesan cheese. (I didn’t have parmesan, so I used colby jack.)
- Bake in the oven for 10-15 minutes, or until chicken reaches 165 degrees F.
- Cut focaccia bread in strips. Cut each strip into 3. Cut a rectangular piece in half, place chicken parmesan onto the bread, and top with arugula. Enjoy!
