After being sick for two weeks, God has given me such an excitement and creative heart for from-scratch cooking again! The past week, I have been trying my hand at new recipes, and using my creative side to bring to life meal ideas that inspire me. The first recipe I am sharing is such a delicious focaccia sandwich.

INGREDIENTS
Focaccia Dough
- 1.5 teaspoon yeast
- 1.5 cups warm water
- 1/2 tablespoon sugar
- 3.5 cups of flour
- 1.5 teaspoons salt
- 1 tablespoon avocado oil
Seasoned Oil Smear
- 1 tablespoon avocado oil
- 2 cloves minced garlic
- 1/2 teaspoon rosemary
- 1/2 teaspoon basil
- 1/2 jalapeno (diced)
- 1 teaspoon salt
Roasted Tomato Sauce
- 1/2 green, 1/2 yellow, 1/2 red bell peppers OR 4 mini bell peppers
- 1 package of cherry tomatoes
- 1 diced onion
- 1 head of garlic (removed from peel)
- 3 tablespoons avocado oil
- 1 teaspoon basil
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon pepper
INSTRUCTIONS
Focaccia Bread Instructions
3 hours before you plan to eat (or earlier) prepare the focaccia dough.
- In a medium sized bowl, combine yeast, warm water, and sugar. Mix thoroughly, and allow it to sit until for 5 minutes until it has bubbled / appears foamy.
- Add flour, salt, and avocado oil (olive oil works too).
- Using a danish whisk, mix the dough until all the ingredients are well combined. Do NOT kneed the dough until smooth.
- Allow dough to rise in a warm location for an hour.
- Add additional oil to your finger tips, remove the dough, and press until it flattens to the size of a baking sheet.
- Allow dough to rise an additional hour.
- When dough has roughly 5 minutes left to rise, combine the ingredients for the smear.
Seasoned Oil Smear Instructions
- In a small bowl, combine avocado oil, freshly minced garlic, rosemary, basil, diced jalapeno, and salt.
- Using a basting brush, brush smear on top of fully risen and shaped bread.
- Use your fingers and gently push seasoned oil smear, creating little finger holes into the dough.
- Bake the bread for 20-25 minutes at 450 degrees F.
Roasted Tomato Sauce Instructions
- In an oven safe dish or cast iron skillet, combine diced bell peppers, diced onion, cherry tomatoes (cut in half), and cloves of garlic.
- Sprinkle avocado oil on top, and add seasonings.
- Using your fingers or a spoon, mix the vegetables around so everything is thoroughly coated.
- Bake in the oven alongside the focaccia bread for 20-25 minutes at 450 degrees F.
Brunch Focaccia Sandwich Instructions
- Cut focaccia bread into columns. Cut each column into 3 rows.
- Cut each piece of bread in half to create a top and bottom sandwich piece.
- Add egg (cooked over hard – bake when there is 10 minutes left of the bread and sauce) to the bottom piece.
- Add cheese, spinach, sausage or bacon (if desired) over the egg.
- Using a fork or whisk, mix together the softened vegetables until it becomes a thick sauce. Smear the sauce on the bottom half of the top piece of bread.
