LEMON POPPY SEED MUFFIN INGREDIENTS
Homemade Lemon Poppy Seed Muffin Ingredients
- 3 cups oat flour (2.5 unbleached all-purpose flour)
- 1 cup sugar
- 3 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons poppy seeds
- 1/2 cup (1 stick) melted butter
- 2 tablespoons oil (I used avocado)
- 2 teaspoons vanilla
- 1 egg
- Juice from 1 lemon
- 1.5 cups milk
- 1/4 teaspoon almond extract
Lemon Glaze Ingredients
- 2 cups powdered sugar
- Juice from 1 lemon
- Add a splash of milk (optional – I personally prefer just the lemon juice)

INSTRUCTIONS
- Preheat oven to 425 degrees F.
- In a medium sized bowl, combine flour, sugar, baking powder, baking soda, salt, and poppy seeds. Stir until thoroughly combined.
- 3 cups oat flour / 2.5 all-purpose, 1 cup sugar, 3 teaspoons baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 2 tablespoons poppy seeds
- Add wet ingredients into the dry ingredients.
- 1 stick melted butter, 2 tablespoons oil, 2 teaspoons vanilla, juice from 1 lemon, 1.5 cups milk, 1/4 teaspoon almond extract
- Whisk ingredients until thoroughly combined.
- Grease muffin tin with butter or oil. Pour batter into muffin tin wells until 3/4 full.
- Bake for 8 minutes. Once 8 minutes are up, lower the oven temperature to 350, and bake an additional 8 minutes.
- While muffins are cooling, whisk together glaze ingredients.
- 2 cups powdered sugar and juice from 1 lemon
- When muffins have cooled, dip the tops in the lemon glaze. You can also pour glaze over top of the lemons. Enjoy!
