What is Activated Charcoal?
In order to get the unique black color, activated charcoal is added to the dough. Activated charcoal isn’t only used for appearance. Studies show it can also help with:
- Gas and bloating
- Cholesterol levels
- Diarrhea
- Kidney disease
MEDICAL NOTE: Activated charcoal is often given in hospital settings helps prevent the poison from being absorbed from the stomach into the body. It can also prevent certain medicines from being absorbed. If you are currently taking medications, look into if activated charcoal could affect your medications.

BLACK HAMBURGER BUN INGREDIENTS
- 1 egg + 1 egg white (save yolk for egg wash: 1 egg yolk + 1 teaspoon water)
- 1 teaspoon salt
- 1 teaspoon sugar
- 2.5 teaspoons yeast
- 3/4 cup warm water
- 3 tablespoons sugar
- 2 teaspoons activated charcoal
- 1/2 cup avocado oil
- 3-3.5 cups flour (it should be lightly sticky and slowly added)
- Sesame seeds (optional)


INSTRUCTIONS
- In a stand mixer, or medium bowl, whisk yeast, sugar, and warm water.
- 3/4 cup warm water + 1 teaspoon sugar + 2.5 teaspoons yeast
- Once yeast mixture is foamy (5 minutes after mixing), add egg + egg white, salt, sugar, active charcoal, and oil. Mix until thoroughly combined.
- 1 egg + 1 egg white, 1 teaspoon salt, 3 tablespoons sugar, 2 teaspoons activated charcoal, and 1/2 cup avocado oil
- Slowly add in flour. Start by adding 2.5 cups and slowly add up until the texture is slightly sticky. Mix in the mixer for 15 minutes.
- 2.5 cups flour adding until slightly sticky consistency (roughly 3.5 cups)
- Shape dough into a ball, place back into bowl, and allow to rise (roughly 1 hour) or until doubled in size.
- Press down and reshape the dough, releasing the built up air. Split the dough into 12 (roughly) smaller balls. Shape the small balls until they are smooth, and flatten with the palm of your hand. This creates a wider bun.
- Place the buns on a parchment paper covered baking sheet. (Add a layer of aluminum foil under the parchment paper to prevent a “burnt” or “more done” bottom bun.)
- Preheat oven to 425 F.
- Allow the buns to rise for 30 minutes – 1 hour. Once they have doubled in size. Use the remaining egg yolk to mix with water to create an egg wash.

- Lightly brush the top and sides of the buns with the egg wash. Sprinkle with sesame seeds.
- Bake the buns for 8-10 minutes (check at 8). Allow 10 minutes to cool and set up.
