I love being able to take a traditional recipe and give it a spin of my own. After struggling to create the “perfect” tortilla, one that isn’t so thick it’s almost pita bread, I have finally created the perfect recipe to take take the typical taco to a new level!

INGREDIENTS
Taco Meat
- 2 pounds ground hamburger (or 1 for smaller family)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon garlic salt
- 2 teaspoons sea salt
- 1/2 teaspoon oregano
- 1/2 teaspoon pepper
- 1/4 teaspoon red pepper flakes
Homemade Savory Sweet Sauce
- 1/2 cup mayo
- 2 tablespoon sweet relish
- 1 diced jalapeno
- 1/2 onion (diced)
- 1 tablespoon ketchup
- 2 teaspoons mustard
- 1 teaspoon white vinegar
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Homemade Tortillas
- 1 teaspoon yeast
- 3/4 cup warm water
- 1/2 teaspoon sugar
- 1-1.5 cups flour
- 1/2 cup corn meal
- 2 tablespoons oil (I use avocado)

INSTRUCTIONS
Homemade Tortilla Instructions
- In a medium sized bowl, add yeast, warm water, and sugar. Whisk until yeast has dissolved. Let sit for about 5 minutes, the mixture should begin to look “foamy” on top.
- After the 5 minutes, add flour, corn meal, and oil. Using a danish whisk, mix the dough until all the ingredients are well combined.
- Allow the tortilla dough to rise at room temperature for at least 30 minutes.
Taco Quesadilla Burger Instructions
- In a medium sized bowl, combine the ground beef with all of the seasonings. Form the beef into patties, and allow them to rest in the fridge.
- Remove patties and allow them to sit in room temperature for 15 minutes.
- While patties are resting, roll out tortilla dough into 8 inch circles. Sprinkle flour over the dough and roll them out with a rolling pin.
- Cook the tortillas on medium low heat on a buttered cast iron skillet. Allow them to cook for 1-2 minutes per side. Wrap tortillas in a towel to stay warm.
- In a hot cast iron skillet, melt 1 tablespoon of butter over medium heat. Place patties directly on the buttered cast iron for roughly 3-5 minutes per side.
- Add two burgers, or a burger cut in half to a tortilla. Top with savory sweet sauce, cheese, tomatoes, lettuce, pickles, sour cream, avocado, salsa, and whatever toppings you like to add to your taco.
- (Optional) place tortilla back onto buttered cast iron skillet (it’s fine to cook in the burger juice), and fry for one minute on both sides.
