This one pot meal is a healthy way to serve your family the majority of the food groups they need in one! With the endless possibilities for variation, change the recipe by simply adding different meats and vegetables you have on hand.

One pot skillet meals are easy and convenient because they have no “right” or “wrong” ingredients. From combining a variety of ingredients left in the fridge, to changing the skillet based on ethnic preference, one pot skillets are a fantastic “go-to” for lunch or dinner.
One Pot Meal Einkorn Skillet Ingredients:
- Meat (you can make an all veggie skillet too)
- Vegetables (variety works best: carrots, celery, potatoes, corn, onions, garlic, etc.)
- Flour (this recipe uses einkorn)
- Milk
- Eggs
- Herbs, Spices, and Salt
- Cheese
- Baking Powder
- Butter


Additional One Pot Meal Fillings & Ingredients
- Beans & Lentils
- Ground Beef, Chicken, Sausage, Turkey
- Green Beans, Peas, Zucchini, Peppers, etc.
- Tomato, Salsa, Cheese, Rice, Avocado, etc.

Directions:
1. Preheat oven to 400 degrees F.
2. In a large cast iron skillet over medium heat, add one tablespoon olive oil, then cook ground beef.
3. After beef is cooked, place on a plate and set aside.
4. Melt butter on the skillet. Add freshly minced garlic, diced onion, and mixed vegetables. Cook vegetables for roughly 15 minutes, or until softened.

5. While vegetables are cooking, combine flour, milk, eggs, salt, basil, and baking powder in a medium sized bowl. Whisk until you get a pancake batter consistency. Add additional flour or milk if it is too thick or runny.





6. When vegetables are done cooking, add the ground beef back into the skillet. Sprinkle additional salt and pepper for flavor. Flatten the vegetable and beef mix, add 1 cup of shredded cheese.



7. Spread the flour mixture over the top of the cheddar layer. Sprinkle the remaining 1 cup of cheddar cheese on the top of the flour mixture.

8. Bake for 25-30 minutes, or until bread top is cooked and golden.

- 1 white onion (diced)
- 3 cloves garlic
- 4 cups mixed vegetables (carrots, celery, corn, etc.)
- 1 ½ cups milk
- 1 ½ cups flour (einkorn)
- 2 teaspoons baking powder
- 3 eggs
- 1 teaspoon basil
- 3 teaspoons sea salt
- 2 cups cheddar cheese
