This simple, yet tasty breakfast encompasses the wholesomeness of einkorn, with the fluffiness of a pancake. Einkorn German pancakes can be made in 20 minutes, and provide a unique, warm, iron and protein filled meal.
German pancakes, often called Dutch baby pancakes, are an oven baked pancake, which create a larger puffier, bread-style dish. Served in slices or squares, and often cooked in iron skillets.
Einkorn Flour FAQ
1. What is einkorn flour?
Einkorn is a species of ancient wheat. It was the first wheat farmers planted 12,000 years ago during the Neolithic Revolution. During the Bronze Age, however, einkorn almost became extinct. Used thousands of years ago by our ancestors, einkorn is different from traditional wheat used today. Einkorn is the only wheat that has two sets of chromosomes, meaning it is the only wheat to not be hybridized. Einkorn also lacks the gluten protein that can trigger issues for those with gluten sensitivity. It also has higher protein, and less carbohydrates that our modern wheat. Einkorn has a silky texture, with a slight yellowish tint.
2. Can I use einkorn if I have celiac disease?
No. Einkorn is not recommended for those who have celiac. It is a great option, however, for those with a gluten sensitivity. My daughter has celiac, and we stick to gluten free flours only for her.
3. Can I substitute einkorn flour for regular flour?
You can, but you will need to tweak the recipe amount of flour used since einkorn absorbs less liquid than regular flour. If you substitute regular flour with einkorn in a recipe, you will need to use more einkorn flour.
Also note, when using einkorn, your batter will have a different color than when using modern wheat flour.

Tips For Making A Einkorn German Pancake
- This recipe can be substituted for unbleached all-purpose flour OR whole wheat flour. If you are substituting with either flour, use 1 cup like you would with einkorn.
- For larger family, use two cast iron skillets to create two einkorn German pancakes. If you have a child with celiac disease, cut the recipe in half, substitute baking 1:1 gluten-free flour, and bake in an 8 inch cast iron skillet.
- Place your cast iron skillet with the butter in the preheating oven. This will allow the butter to melt, while you create the einkorn german pancake batter.
- Warm your syrup before using. I place maple syrup in a small bowl and microwave for 40 seconds. You can also make a homemade berry syrup by adding 1 cup frozen fruit, 1/2 cup water, 2 tablespoons corn starch, and 1/2 cup sugar or honey.
- Serve with homemade whipped cream. To make homemade whipped cream, mix using a hand or stand mixer 1/2 cup of heavy whipping cream. Continue to mix until it becomes thick and has the consistency of whipping cream. Add 1/4 cup powdered sugar. Continue whisking until mixed. You can add additional sugar if you want it sweeter. NOTE: Do not add the powdered sugar UNTIL the heavy whipping cream is whipped. Otherwise, you will create frosting.

How To Make Einkorn German Pancakes

- Preheat oven to 425 degrees F. Place 5 tablespoons of butter onto a cast iron skillet, and place skillet in the preheating oven. Whisk together the batter while butter is melting.

2. Whisk 6 eggs in a medium sized bowl.
3. Add einkorn flour, baking powder, salt, milk and vanilla. Whisk thoroughly to create batter.




4. Pour batter onto heated skillet over the butter. Bake for 15-20 minutes.


5. Remove einkorn german pancake once batter has browned and puffed around the edges, and the top should be firm.


6. Sprinkle with powdered sugar, and top with fruit, whipped cream, and syrup.
