INGREDIENTS
Cheese and Pepper Focaccia Ingredients
- 1 tablespoon avocado oil + 1 teaspoon for top
- 1.5 teaspoon yeast
- 1.5 cups warm water
- 1/2 tablespoon sugar
- 3.5 cups of flour
- 1.5 teaspoons salt
- 1/2 cup shredded cheddar cheese
- 1 large or 2 medium sized Hungarian hot wax peppers (jalapeños or poblano peppers)

INSTRUCTIONS
Cheese and Pepper Focaccia Bread Instructions
- In a medium sized bowl, combine yeast, warm water, and sugar. Mix thoroughly, and allow it to sit until for 5 minutes until it has bubbled / appears foamy.
- Add flour, salt, and avocado oil (olive oil works too).
- Slice and dice hot peppers into small pieces. Add the pepper to the dough. You can also add 1/4 cups of the shredded cheese if you wish.
- Using a danish whisk, mix the dough until all the ingredients are well combined. Do NOT kneed the dough until smooth.
- Allow dough to rise in a warm location for an hour.
- Add additional oil to your finger tips, remove the dough, and press until it flattens to the size of an 8 inch cast iron skillet.
- Allow dough to rise an additional hour, or until it has reached the top.
- Sprinkle the top of the focaccia bread with avocado oil (1 teaspoon), the remaining 1/4 cup of shredded cheddar cheese, and 1 teaspoon of salt.
- Gently press your fingers into the dough, pressing in the topped ingredients.
- Bake the bread at 425 degrees F for 25 minutes.

Yield: 1 loaf
