Today, I am excited to share with you my from scratch recipe: Baked French Toast Casserole. There is something fulfilling about watching your family enjoy a breakfast that you whipped up from scratch.
This easy to make baked french toast casserole can be prepared the night before, or made the day of. If you plan to make this breakfast the day of serving, make sure the bread is prepared the day before. You can also make this recipe with store-bought bread, however, the homemade honey and oat bread adds a touch of sweetness, health, and wholesomeness.

Tips for Making Baked French Toast Casserole
- Make homemade bread the day before, or serve the baked french toast casserole as a breakfast for dinner option! You can also prepare the casserole the night before as well.
- Add fresh or frozen fruit into the casserole mixture for a yummy fruity variety.
- Use cubed or shredded butter that is cold (frozen is preferred) to create a crispy crumble. This recipe calls for softened butter.
- Warm maple syrup to add to the warmth of the french toast casserole, and powdered sugar for additional sweetness.

- Stand mixer with dough hook or hand knead
- Medium sized bowl for dough (not affiliated)
- Danish dough whisk
- Cast iron Dutch oven
- Cast iron loaf pan
- Banneton bread basket
- Measuring spoons and cups
- 9×13 baking dish
Oat and Honey Bread Ingredients
- 2 1/4 teaspoon active dry yeast (1 packet)
- 1/4 cup hot (not boiling) water
- 1 cup milk (microwave for 30 seconds or warm)
- 5 tablespoons of honey
- 1 teaspoon salt
- 1 cup oats (I prefer old fashioned or rolled)
- 2 tablespoons butter
- 3 cups unbleached bread flour (3.5 einkorn or gluten free 1 to 1 baking flour)
How To Make Oat and Honey Bread
1. Whisk active dry yeast and hot water in a medium sized bowl until yeast has dissolved.
2. Add and whisk milk, honey, salt, oats, and butter.

3. Once combined, slowly add in flour. Knead until dough is smooth and not too sticky. Sprinkle flour and continue kneading if dough is too sticky to shape.
4. Shape dough into a ball, and allow 1-2 hours to rise, or until it has doubled in size. Allowing your dough to rise in the oven at 95 degrees F activates the yeast and quickens rise time.
5. Place the risen bread ball into a rice flour coated banneton bread basket. Allow dough to rise an additional hour. Once risen, flip dough into a parchment paper filled Dutch oven.



6. Bake with the lid on for 45 minutes at 375 degrees F.

Crumble Ingredients
- 4 tablespoons butter (soft)
- 1/2 cup brown sugar
- 1/4 cup sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
Casserole & Filling Ingredients
- 1 loaf oat and honey bread (cubed)
- 6 tablespoons butter (melted)
- 4 eggs
- 1/2 cup milk or heavy cream
- 1/2 cup syrup
- 1/2 tablespoon cinnamon
- 2 teaspoons vanilla
How to Make Baked French Toast Casserole
1. In a small bowl, combine soften butter, brown sugar, sugar, cinnamon and salt. Set aside.

2. Mix butter, eggs, milk, syrup, cinnamon, and vanilla in a small to medium sized bowl.
3. Cube homemade oat and honey bread, and spread evenly in a greased 9×13 baking dish.
4. Pour liquid filling over the cubed bread pieces. Mix the bread around (your hands work the best), making sure all of the bread is coated with filling.
5. Drizzle honey on the top of the coated cubed bread. Sprinkle brown sugar crumble on the top of the casserole.
6. Bake at 350 degrees F for 30 minutes.



Serve with warm maple syrup and fresh fruit.
