Crispy, yet fluffy easy potato waffles are a quick way to create a healthy and delicious breakfast. This easy recipe, consists of shredded potatoes, eggs, milk, cheese, flour, and seasonings pressed into a waffle iron.

Creating a unique and delicious breakfast can now be done in minutes! After I decided to “detox” my kids from eating primarily cereal for breakfast, I was on the search to find breakfast options that were “kid approved”, yet easy to make. This has now become one of our go to breakfast choices.
NOTES
This easy potato waffle recipe can also be made with mashed potatoes and frozen hash browns.
You can easily exchange the flour to all-purpose gluten free, oat, almond, or einkorn flour.
This recipe makes 5 full sized waffles. If you want to create more waffles that are smaller, use a 1/2 cup measuring cup instead.
Waffle iron should be set a touch above medium heat.

Tips for Making This Easy Potato Waffle Recipe
- You can use pre-shredded hash browns or leftover mashed potatoes to make the prep time faster.
- Add sour cream, eggs, salsa, avocado, bacon, cubed ham, nacho cheese, or salted jellies for delicious topping options.
- You can also add diced ham or cooked bacon into the waffle batter.
- These waffles are very filling, making smaller waffles may be the best option to feed more guests, and utilize the batter.

INGREDIENTS
- 5 russet potatoes shredded (any potato will work, just adjust the quantity) (roughly 5 cups)
- 3 eggs
- 1 cup milk
- 1 cup shredded cheese (I like cheddar gruyere)
- 2 cups all-purpose unbleached flour
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon pepper
EASY POTATO WAFFLE RECIPE DIRECTIONS
1. Peel the russet potatoes, then shred them with a cheese grater. (You can also use KitchenAid attachment graters as well).
2. Heat waffle iron on medium heat.



3. In a medium sized mixing bowl, whisk together eggs, milk, shredded cheese, and seasonings.

4. Slowly whisk flour until batter becomes thicker.

5. Add shredded potatoes, and mix thoroughly.


6. Using a measuring cup (1/2 cup for smaller waffles, 1 cup for full sized waffles), pour batter onto heated waffle iron. Cook for roughly 2-3 minutes. (Most waffle irons have an indicator light when the waffle is done).

7. Add topping options: sour cream, eggs, salsa, avocado, bacon, cubed ham, nacho cheese, or salted jellies for delicious topping options.
